Fish roe, or caviar, is sticky, black in color, and very tasty. The sterlet feeds on insect larvae (white or pinkish fatty little worms) moving along the bottom of the water body. The sterlet's grayish-toned meat and the reddish fat covering the subcutaneous layer are delicious.
